Pumpkin Chocolate Chip Muffins

Pumpkin season is here and everyone is enjoying the fall flavors of pumpkin spice. I love baking during this time and I make a mean banana chocolate chip bread, but I wanted to switch it up a bit a try pumpkin instead.

I have fallen in love with pumpkin chocolate chip muffins in the fall. I used to think this fall flavor combination wouldn’t work but boy was a wrong! It’s delicious and the perfect fall dessert or breakfast muffin.

These muffins were made with a pumpkin bread mix and I just added the chocolate chips in before baking. But if you prefer to make your pumpkin chocolate chips muffins from scratch, you can find my go to recipe for pumpkin chocolate chip bread below.


Pumpkin Chocolate Chip Muffin Recipe

Ingredients you need:

1/2 cup butter, softened

1 cup brown sugar

2 eggs

1cup canned pumpkin (not pumpkin pie mix)

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/2 cup miniature semisweet chocolate chip

Directions:

Heat your oven to 350°F. Grease bottom only of a 9×5-inch loaf pan with shortening or cooking spray. In a large bowl, mix butter, granulated sugar, eggs and pumpkin with a wire whisk. In a separate bowl, stir flour, baking soda, cinnamon, and pumpkin pie spice. Slowly stir wet ingredients into dry ingredients. Add in chocolate chips. Pour about half way into a muffin tin. Bake for 25 minutes or until the toothpick inserted in center comes out clean. Cool for 10 minutes; remove from pan to cooling rack. Serve warm or cool completely for about 2 hours.

If you are making a loaf as I usually do, bake for 55 to 65 minutes.
