Healthy Cranberry Applesauce Bread

Looking for a healthy breakfast treat this Christmas?  I've got just the thing.  I baked up a special twist on Cranberry Bread that's tasty yet missing all the fat.




Instead of using oil in this recipe, you're going to replace it with applesauce.  I promise you won't miss it. Plus the applesauce goes perfectly with the Cranberry giving you a sweet, flavorful, bread.



Recipe:

Preheat oven to 350 degrees 

2 cups all-purpose flour

3/4 cup sugar (brown or white)

3/4 teaspoon salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup chopped cranberries

1 egg

1 cup applesauce

pinch of cinnamon (optional)






Mix all dry ingredients in separate bowl.  Mix wet ingredients, egg, sugar, applesauce in another bowl. 

Slowly add dry ingredients into the egg mixture. Stir.  Add cranberries and stir.  Bake for 50 minutes.
