An Evening of Freshness with Litehouse Foods

Hey peeps, how's it going?  Hope you're enjoying June so far. Last week I had the pleasure of attending a wonderful evening of fresh food and conversation thanks to Litehouse Foods.






Ten local Minnesota bloggers as well the folks from Litehouse Foods along with Chef Daniel met at the Birchwood Cafe. This neighborhood restaurant is tucked away in the Seward community in Minneapolis. It's funny because I was just telling my husband I wanted to visit the restaurant after seeing it featured in a news segment.






We were warmly welcomed by Birchwood staff and chatted a bit before we ate our three-course meal. It's always good to see fellow bloggers and catch up with everyone. We all took pictures of the beautiful appetizers that were prepared for us.










We talked throughout the night with Litehouse rep Chef Daniel Green and each other about our healthy eating, diets, recipes, you name it. Then, it was time to learn more about Litehouse Foods.  shared a bit about the company.

First, we started with the Spring Salad with none other than Litehouse Homestyle Ranch dressing. I also tried the Litehouse Blue Cheese which I could see myself dipping into with a few hot wings and celery sticks.






Veggies with rice and cooked chicken on the side. Delicious! Oh, and a tasty side of guacamole made with Litehouse Homestyle Ranch dressing. More on that later.






And as if we weren't already full of yummy goodness, it was time for dessert. I had the Key Lime Pie one of my summer favorites.












Chef Daniel showed us how to make fresh guacamole using a little bit of Litehouse Homestyle Ranch dressing and Litehouse Guacamole herbs. This was some of the best guacamole I have ever tasted! I'm definitely going to try this at home.





We all went home with a swag bags full of Litehouse Foods gifts. Mmm, I can't wait to make some fresh salad!
